Gochujang Chicken and Rice
Chicken Ingredients
1 tablespoon olive oil
1/2 red onion, diced
8 oz. mushrooms, diced
1 large red bell pepper, chopped
3 cloves garlic, minced
½ teaspoon kosher salt
Freshly ground black pepper
1.5 pound chicken, cut into small pieces
Sauce Ingredients
1/4 cup water
1/4 cup low sodium soy sauce
2.5 tablespoons gochujang
1 tablespoon olive oil
2 tablespoons rice vinegar
2 tablespoons brown sugar
1 tablespoon grated ginger
3 garlic cloves, minced
Additional Ingredients
1 cup edamame, prepared
3 cups rice, prepared
Green onions for garnish
Directions
Cook chicken with the listed ingredients until chicken is no longer pink
While chicken is cooking, combine all the sauce ingredients
Add sauce to chicken and cook for 5 minutes on medium heat
Prepare rice according to package directions. (I like to use the precooked rice packets as it makes preparation and portion control simple!)
Stir in edamame and rice, garnish with green onions
Serves 4
