Gochujang Chicken and Rice

Chicken Ingredients

  • 1 tablespoon olive oil

  • 1/2 red onion, diced

  • 8 oz. mushrooms, diced

  • 1 large red bell pepper, chopped

  • 3 cloves garlic, minced

  • ½ teaspoon kosher salt

  • Freshly ground black pepper

  • 1.5 pound chicken, cut into small pieces

Sauce Ingredients

  • 1/4 cup water

  • 1/4 cup low sodium soy sauce

  • 2.5 tablespoons gochujang

  • 1 tablespoon olive oil

  • 2 tablespoons rice vinegar

  • 2 tablespoons brown sugar

  • 1 tablespoon grated ginger

  • 3 garlic cloves, minced

Additional Ingredients

  • 1 cup edamame, prepared

  • 3 cups rice, prepared

  • Green onions for garnish

Directions

  • Cook chicken with the listed ingredients until chicken is no longer pink

  • While chicken is cooking, combine all the sauce ingredients

  • Add sauce to chicken and cook for 5 minutes on medium heat

  • Prepare rice according to package directions. (I like to use the precooked rice packets as it makes preparation and portion control simple!)

  • Stir in edamame and rice, garnish with green onions
