Creamy Harissa Chicken Pasta
Ingredients
1 Tbsp olive oil
2 tsp salt
2 carrots, diced
1 onion, diced
1 bell pepper, diced
2 cups bone broth, added slowly
1.5 pounds chicken, cut into bite sized pieces
3 cloves garlic
1/4 cup tahini
3 Tbsp Harissa
4 cups cooked rotini or other pasta
Directions
Sauté carrots, onion, and bell pepper in olive oil, season with 1 tsp. salt
Add bone broth a little at a time until veggies are soft
Add chicken, season with remaining salt and cook for 4 minutes
Add remaining bone broth, garlic, tahini, and harissa and simmer on medium for 5 minutes or until chicken is cooked through
Stir in cooked pasta
*Harissa can be spicy so if you don’t want it too spicy, start with 1 Tbsp and add to taste before adding pasta.
