Jambalaya

Ingredients

  • 2 tbsp olive oil

  • 2 bell peppers, diced

  • 1 small onion diced

  • 6 tbsp Cajun seasoning

  • 2 tsp Salt

  • 1 pound chicken breast, diced

  • 1 can tomatoes

  • 4 cloves garlic, diced

  • 1 cup stock

  • 1 pound andouille sausage, sliced

  • 1 pound shrimp, cooked and frozen

  • 3 cups prepared rice

Directions

  • Sauté bell peppers and onions in 2 Tbsp. olive oil with 2 Tbsp. Cajun seasoning and 1 tsp salt until soft.

  • Add chicken, canned tomatoes, garlic, stock, 4 Tbsp. Cajun seasoning and 1 tsp salt and cook until chicken is no longer pink.

  • Add Andouille sausage and shrimp and cook until heated through. Adjust seasoning if desired by adding more salt or Cajun seasoning to your preference.

  • Prepare rice according to package directions. (I like to use the precooked rice packets as it makes preparation and portion control simple!)

  • Stir in rice and serve. Garnish with chopped green onions if desired.
