Jambalaya
Ingredients
2 tbsp olive oil
2 bell peppers, diced
1 small onion diced
6 tbsp Cajun seasoning
2 tsp Salt
1 pound chicken breast, diced
1 can tomatoes
4 cloves garlic, diced
1 cup stock
1 pound andouille sausage, sliced
1 pound shrimp, cooked and frozen
3 cups prepared rice
Directions
Sauté bell peppers and onions in 2 Tbsp. olive oil with 2 Tbsp. Cajun seasoning and 1 tsp salt until soft.
Add chicken, canned tomatoes, garlic, stock, 4 Tbsp. Cajun seasoning and 1 tsp salt and cook until chicken is no longer pink.
Add Andouille sausage and shrimp and cook until heated through. Adjust seasoning if desired by adding more salt or Cajun seasoning to your preference.
Prepare rice according to package directions. (I like to use the precooked rice packets as it makes preparation and portion control simple!)
Stir in rice and serve. Garnish with chopped green onions if desired.
